- 1 1/2 cups chocolate cookie crumbs
- 6 tbsp unsalted butter, melted
- 2 tbsp granulated sugar
- 1 cup fresh or frozen strawberries
- 2 tbsp granulated sugar
- 1 tsp lemon juice
- 16 oz cream cheese, softened
- 3/4 cup granulated sugar
- 3 large eggs
- 1/2 cup sour cream
- 1/2 cup semi-sweet chocolate chips, melted and slightly cooled
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
- Mix together chocolate cookie crumbs, melted butter, and sugar until combined. Press this mixture into the bottom of the pan. Bake for 8-10 minutes, then let cool.
- In a saucepan, combine strawberries, 2 tablespoons sugar, and lemon juice. Cook until it thickens, then blend until smooth. Set aside to cool.
- In a large bowl, beat the softened cream cheese and 3/4 cup sugar until smooth. Add the eggs one at a time, mixing well after each addition. Mix in sour cream, melted chocolate, and vanilla extract.
- Pour the chocolate filling over the cooled crust. Spoon the strawberry sauce on top and gently swirl with a knife or toothpick.
- Bake the cheesecake for 55-65 minutes in a water bath until the edges are set.
- Turn off the oven and leave the cheesecake inside for 1 hour. Allow to cool to room temperature, then refrigerate for at least 4 hours or overnight.
- Once chilled, remove from the pan and garnish with fresh strawberries or chocolate syrup before serving.
Notes
For best flavor, use fresh strawberries. Keep any leftovers covered in the refrigerator, where they will last 3-5 days.
