Ingredients

  • 1 1/2 cups (150 g) chocolate cookie crumbs
  • 1/4 cup (60 g) unsalted butter, melted
  • 24 oz (680 g) cream cheese, softened
  • 1 cup (200 g) granulated sugar
  • 1/4 cup (30 g) unsweetened cocoa powder
  • 3 large eggs
  • 1/2 cup (120 ml) sour cream
  • 1 teaspoon vanilla extract
  • 1/2 cup (120 ml) strawberry puree
  • 2 tablespoons (25 g) granulated sugar
  • Fresh strawberries (optional)
  • Chocolate shavings (optional)

Instructions

  1. Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. In a bowl, mix chocolate cookie crumbs and melted butter until combined. Press the mixture firmly into the bottom of the prepared pan. Set aside.
  3. In a large mixing bowl, beat the cream cheese until smooth. Add sugar and cocoa powder, mixing until fully incorporated.
  4. Add eggs one at a time, beating well after each addition. Stir in sour cream and vanilla extract until creamy and smooth.
  5. In a small bowl, combine strawberry puree and sugar, stirring until dissolved.
  6. Pour half of the chocolate cheesecake filling over the crust, drizzle half of the strawberry puree over it, and create a swirl pattern with a knife. Repeat with the remaining filling and puree.
  7. Bake for 50-60 minutes, or until the center is just set. Cool in the oven with the door ajar for 1 hour, then refrigerate for at least 4 hours or overnight.
  8. Top with fresh strawberries and chocolate shavings if desired. Slice and serve chilled.

Notes

Serve the cheesecake chilled for the best taste. Store leftovers in the fridge for 3 to 5 days or freeze for longer storage.
