Ingredients

  • 1 cup crushed graham crackers
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 4 packages (8 oz each) cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1/2 cup sour cream
  • 1 cup fresh strawberries, pureed
  • 1/2 cup semi-sweet chocolate chips, melted
  • 1 tablespoon cocoa powder

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine the crushed graham crackers, granulated sugar, and melted butter. Mix until well combined.
  3. Press the graham cracker mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  4. In a large bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar while continuing to beat.
  5. Mix in the vanilla extract, followed by the eggs one at a time, ensuring each egg is fully incorporated before adding the next.
  6. Stir in the sour cream until just combined.
  7. Divide the cheesecake batter into two bowls. In one bowl, add the melted chocolate and cocoa powder. Mix until smooth. In the second bowl, gently fold in the strawberry puree.
  8. Pour spoonfuls of the chocolate and strawberry mixtures into the prepared crust, alternating between the two to create a swirl effect. Use a knife or skewer to swirl the batters gently.
  9. Bake in the preheated oven for about 60-70 minutes, or until the edges are set, and the center has a slight jiggle.
  10. Turn off the oven, crack the oven door slightly, and allow the cheesecake to cool in the oven for 1 hour.
  11. Chill the cheesecake in the refrigerator for at least 4 hours, or overnight, before serving.

Notes

Serve with fresh strawberries and a drizzle of chocolate sauce. Whipped cream is a nice addition too.
