- 1 cup crushed graham crackers
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 4 packages (8 oz each) cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1/2 cup sour cream
- 1 cup fresh strawberries, pureed
- 1/2 cup semi-sweet chocolate chips, melted
- 1 tablespoon cocoa powder
Instructions
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, combine the crushed graham crackers, granulated sugar, and melted butter. Mix until well combined.
- Press the graham cracker mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
- In a large bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar while continuing to beat.
- Mix in the vanilla extract, followed by the eggs one at a time, ensuring each egg is fully incorporated before adding the next.
- Stir in the sour cream until just combined.
- Divide the cheesecake batter into two bowls. In one bowl, add the melted chocolate and cocoa powder. Mix until smooth. In the second bowl, gently fold in the strawberry puree.
- Pour spoonfuls of the chocolate and strawberry mixtures into the prepared crust, alternating between the two to create a swirl effect. Use a knife or skewer to swirl the batters gently.
- Bake in the preheated oven for about 60-70 minutes, or until the edges are set, and the center has a slight jiggle.
- Turn off the oven, crack the oven door slightly, and allow the cheesecake to cool in the oven for 1 hour.
- Chill the cheesecake in the refrigerator for at least 4 hours, or overnight, before serving.
Notes
Serve with fresh strawberries and a drizzle of chocolate sauce. Whipped cream is a nice addition too.
