  • 1 cup fresh strawberries, hulled and sliced
  • 2 tablespoons sugar
  • 2 tablespoons water
  • 1 teaspoon lemon juice
  • Semi-sweet chocolate chips

Instructions

  1. Prepare the Strawberry Mousse: Pulse freeze-dried strawberries in a food processor until finely ground. In a mixing bowl, whip heavy cream, powdered sugar, and strawberry emulsion until stiff peaks form. Gently fold in the strawberry powder.
  2. Make the Strawberry Compote: In a saucepan, combine sliced strawberries, sugar, water, and lemon juice. Cook over medium heat for 5-7 minutes until thickened, then let cool.
  3. Chocolate-Covered Strawberries: Melt semi-sweet chocolate chips in the microwave in 30-second intervals. Dip strawberries in melted chocolate and place on parchment to set.
  4. Assemble the Parfaits: Layer chocolate cake cubes, strawberry mousse, strawberry compote, and fresh strawberries in serving glasses. Repeat layers and finish with strawberry mousse on top.
  5. Garnish with chocolate-covered strawberries before serving.

Notes
