- 1 cup heavy cream

- 1 cup fresh strawberries, hulled and sliced
- 2 tablespoons sugar
- 2 tablespoons water
- 1 teaspoon lemon juice
- Semi-sweet chocolate chips
Instructions
- Prepare the Strawberry Mousse: Pulse freeze-dried strawberries in a food processor until finely ground. In a mixing bowl, whip heavy cream, powdered sugar, and strawberry emulsion until stiff peaks form. Gently fold in the strawberry powder.
- Make the Strawberry Compote: In a saucepan, combine sliced strawberries, sugar, water, and lemon juice. Cook over medium heat for 5-7 minutes until thickened, then let cool.
- Chocolate-Covered Strawberries: Melt semi-sweet chocolate chips in the microwave in 30-second intervals. Dip strawberries in melted chocolate and place on parchment to set.
- Assemble the Parfaits: Layer chocolate cake cubes, strawberry mousse, strawberry compote, and fresh strawberries in serving glasses. Repeat layers and finish with strawberry mousse on top.
- Garnish with chocolate-covered strawberries before serving.
Notes
Ensure heavy cream is cold before whipping for best results. For gluten-free, use gluten-free chocolate cake.
