Chocolate Strawberry Layer Cake

Ingredients

  • 2 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup hot coffee
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1/2 cup strawberry puree
  • 1/2 tsp vanilla extract
  • 1 cup fresh strawberries, sliced
  • 1 cup heavy cream
  • 1 1/2 cups semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. Add the buttermilk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Mix until smooth.
  4. Stir in the hot coffee. The batter will be thin, and that’s perfectly fine.
  5. Divide the batter evenly between the prepared cake pans and bake for 30-35 minutes. Let the cakes cool completely in the pans.
  6. While the cakes cool, prepare the strawberry filling. Beat the heavy whipping cream and powdered sugar together until soft peaks form.
  7. Add the strawberry puree and vanilla extract. Mix until the filling becomes thick and fluffy.
  8. Next, make the ganache. Heat the heavy cream until warm, then pour it over the chocolate chips. Let it sit for 2 minutes, then stir until smooth.
  9. To assemble the cake, place one cake layer on a serving plate. Spread the strawberry filling over it, then add sliced strawberries on top. Place the second layer on top and pour the ganache over the entire cake.
  10. Garnish with fresh strawberries before serving.

Notes

For a richer flavor, replace water with coffee when making chocolate cakes. Store any leftover cake in an airtight container in the refrigerator for up to 3-4 days.
