A delightful dessert combining rich chocolate and fresh strawberries with a cookie crust and chocolate ganache.
Ingredients

- 1 1/2 cup chocolate sandwich cookies (Oreo type), crushed
- 1/4 cup melted butter
- 1 1/2 quart strawberry ice cream
- 1/2 cup strawberry jam
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
- 1 cup heavy cream
- 2 tablespoons powdered sugar
Instructions
- Mix the crushed cookies with the melted butter and press firmly into the bottom of a 9-inch springform pan. Freeze for 10 minutes.
- Spread strawberry ice cream over the cooled crust. Drizzle strawberry jam over the top and freeze for 30 minutes.
- Melt chocolate chips and mix with 1/2 cup heavy cream until smooth. Pour over ice cream and freeze for another 10 minutes.
- Whip 1 cup heavy cream with powdered sugar until soft peaks form. Decorate the cake with whipped cream on top.
Notes
Allow the ice cream to soften a bit before spreading it over the crust. You can use any type of ice cream for a different flavor.
