Chocolate Strawberry Fantasy Ice Cream Cake

Description

A delightful dessert combining rich chocolate and fresh strawberries with a cookie crust and chocolate ganache.


Ingredients

  • 1 1/2 cup chocolate sandwich cookies (Oreo type), crushed
  • 1/4 cup melted butter
  • 1 1/2 quart strawberry ice cream
  • 1/2 cup strawberry jam
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar

Instructions

  1. Mix the crushed cookies with the melted butter and press firmly into the bottom of a 9-inch springform pan. Freeze for 10 minutes.
  2. Spread strawberry ice cream over the cooled crust. Drizzle strawberry jam over the top and freeze for 30 minutes.
  3. Melt chocolate chips and mix with 1/2 cup heavy cream until smooth. Pour over ice cream and freeze for another 10 minutes.
  4. Whip 1 cup heavy cream with powdered sugar until soft peaks form. Decorate the cake with whipped cream on top.

Notes

Allow the ice cream to soften a bit before spreading it over the crust. You can use any type of ice cream for a different flavor.
