  • 1.5 cups fresh strawberries, chopped
  • 1/2 cup sugar (for the strawberries)
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1/2 cup strawberry puree (strained)
  • Whole fresh strawberries (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line three 8-inch round cake pans.
  2. In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, buttermilk, warm water, vegetable oil, and vanilla extract. Mix until the batter is smooth and well combined.
  4. Divide the batter evenly between the prepared pans and bake for 30–35 minutes. Once baked, let the cakes cool completely.
  5. In a saucepan, combine the chopped strawberries, sugar, and lemon juice. Cook over medium heat until the strawberries soften. Stir in the cornstarch mixture and simmer until it thickens. Let it cool.
  6. In a separate bowl, whip the heavy cream with powdered sugar until soft peaks form. Gently fold in the strawberry puree and chill until ready to use.
  7. Layer the cooled cakes with the strawberry filling and whipped frosting. Frost the entire cake and decorate with whole fresh strawberries.

Notes

Ensure all ingredients are at room temperature for the best mixing results. Consider using dark cocoa powder for deeper chocolate flavor.
