- 2 cups chocolate cookie crumbs
- 1/4 cup melted butter
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 4 large eggs
- 1 cup sour cream
- 1/2 cup strawberry puree
- 1/2 cup melted semi-sweet chocolate
- Fresh strawberries (for garnish)
Instructions
- Preheat your oven to 325°F (163°C).
- In a medium bowl, combine the chocolate cookie crumbs and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
- In a large bowl, beat the softened cream cheese, granulated sugar, and vanilla extract together until smooth and creamy. Add the eggs one at a time, beating well after each addition. Mix in the sour cream until fully combined.
- Divide the cheesecake batter into two equal portions. Stir the strawberry puree into one half and the melted semi-sweet chocolate into the other.
- Pour the chocolate batter over the crust first, then layer the strawberry batter on top.
- Bake for 55-60 minutes, until the center is set but still slightly jiggly. Remove and cool to room temperature.
- Refrigerate for at least 4 hours or overnight.
- Before serving, garnish with fresh strawberries and drizzle melted chocolate over the top.
Notes
For a cleaner slice, use a warm knife to cut the cheesecake. You can add whipped cream on top for extra sweetness.
