- 2 cups Oreo cookie crumbs (about 24 cookies, crushed)
- 6 tbsp unsalted butter, melted
- 16 oz (450 g) cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix together the Oreo cookie crumbs and melted butter until well combined. Press the mixture firmly into the bottom of a greased 9×9 inch baking pan to form the crust.
- In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.
- Add the eggs one at a time, mixing after each addition. Stir in the vanilla extract.
- Pour the cheesecake filling over the crust in the baking pan and smooth the top.
- Bake in the preheated oven for 30-35 minutes, or until the center is set.
- Allow the cheesecake to cool, then refrigerate for at least 4 hours before slicing into bars.
- Optional: Top with fresh strawberries before serving.
Notes
For extra flavor, add fresh strawberry slices or a drizzle of chocolate sauce on top. These cheesecake bars can be served chilled or at room temperature.
