Ingredients

- 1 box brownie mix (plus ingredients listed on box to prepare brownies)
- 1 bag (10 oz) mini marshmallows
- 1 1/2 cups shredded sweetened coconut
- 1/2 cup heavy cream
- 1 cup semi-sweet chocolate chips
- 1/2 teaspoon vanilla extract
- Pink food coloring (optional)
Instructions
- Prepare the brownie mix according to the package instructions and bake in a greased pan. Allow to cool.
- Once cooled, cut the brownies into squares.
- In a bowl, whip the heavy cream until it forms stiff peaks.
- Dip each brownie square into the whipped cream, then roll in mini marshmallows.
- Roll the coated brownies in shredded coconut until fully covered.
- Melt the semi-sweet chocolate chips and mix in the vanilla extract.
- Drizzle the chocolate over the coconut-covered brownies for decoration.
- If using, add a few drops of pink food coloring to the remaining whipped cream and mix.
- Serve immediately or chill in the fridge for a firmer texture.
Notes
Make sure brownies are well-cooled before cutting to prevent crumbling. Experiment with different toppings for added texture and flavor.
