- 1/4 cup unsweetened cocoa powder

- 4 large eggs (separated)
- 3/4 cup granulated sugar (divided)

- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- 2 tbsp powdered sugar
- 1/2 tsp vanilla extract
- 1/2 cup heavy cream (for ganache)
- 4 oz semi-sweet chocolate (chopped)
Instructions
- Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper.
- Sift together flour, cocoa powder, baking powder, and salt in a bowl.
- In a large bowl, whisk egg yolks, 1/2 cup sugar, milk, oil, and vanilla extract until smooth.
- Gradually add dry ingredients to wet ingredients, mixing until smooth.
- In a separate bowl, beat egg whites until foamy, then gradually add remaining sugar until stiff peaks form.
- Gently fold whipped egg whites into the batter in three parts until fully combined.
- Pour batter into prepared pan and spread evenly. Bake for 12-15 minutes or until the top springs back when touched.
- While still warm, roll the cake with a kitchen towel from the short end, and let it cool completely.
- In a bowl, beat heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form for the filling.
- Unroll cooled cake, spread cream filling evenly, and roll it back up.
- For the ganache, heat heavy cream until simmering, pour over chopped chocolate, let sit for 2-3 minutes, then stir until smooth.
- Drizzle or spread ganache over the rolled cake.
- Chill the cake for at least 30 minutes before slicing. Serve with powdered sugar or fresh berries.
Notes
Make sure to roll the cake while it is warm for best results. Chill before serving to enhance flavors.
