- 3/4 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt
- 4 large eggs (separated)
- 3/4 cup granulated sugar (divided)
- 1/4 cup milk
- 1/4 cup vegetable oil
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- 2 tbsp powdered sugar
- 1/2 tsp vanilla extract
- 1/2 cup heavy cream
- 4 oz semi-sweet chocolate (chopped)
Instructions
- Preheat the oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
- In a bowl, sift together the flour, cocoa powder, baking powder, and salt.
- In another bowl, whisk the egg yolks with 1/2 cup of sugar, milk, oil, and vanilla extract until smooth.
- Gradually mix in the dry ingredients to the egg yolk mixture.
- In a separate bowl, beat the egg whites until foamy. Gradually add the remaining 1/4 cup of sugar and beat until stiff peaks form.
- Carefully fold the egg whites into the chocolate cake batter.
- Pour the batter into the prepared pan and bake for 12-15 minutes.
- Once baked, roll the warm cake in a damp towel and let it cool.
- For the filling, beat heavy cream with powdered sugar and vanilla extract until stiff peaks form.
- Unroll the cooled cake, spread the filling evenly, and roll the cake back up.
- For optional ganache, heat 1/2 cup of heavy cream and pour it over the chopped chocolate. Let it sit for a few minutes, then stir until smooth.
- Drizzle the ganache over the rolled cake.
- Chill in the refrigerator before slicing and serving.
Notes
You can customize the filling with flavored whipped cream, fruit preserves, or peanut butter.
