  • 3/4 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 4 large eggs (separated)
  • 3/4 cup granulated sugar (divided)
  • 1/4 cup milk
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract (for cream)
  • 1/2 cup heavy cream (for ganache)
  • 4 oz semi-sweet chocolate (chopped)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 10×15-inch jelly roll pan with parchment paper.
  2. In a bowl, sift together the flour, cocoa powder, baking powder, and salt.
  3. In a large bowl, whisk the egg yolks, 1/2 cup sugar, milk, oil, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until smooth.
  5. In a separate bowl, beat the egg whites until frothy, then gradually add the remaining sugar and beat until stiff peaks form.
  6. Gently fold the egg whites into the cake batter in three parts until everything is well combined.
  7. Pour the batter into the prepared pan and bake for 12-15 minutes, or until the top springs back when touched.
  8. While warm, roll the cake with a kitchen towel from the short end and let it cool completely.
  9. For the cream filling, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
  10. Once the cake has cooled, gently unroll it, spread the whipped cream filling, and roll it back up.
  11. For the ganache, heat the heavy cream in a saucepan until it simmers, then pour it over the chopped chocolate. Let it sit for a moment, then stir until smooth.
  12. Drizzle the ganache over the rolled cake.
  13. Chill the cake for at least 30 minutes before slicing. Slice and serve, optionally dusting with powdered sugar or adding fresh berries.

Notes

Make sure your eggs are at room temperature for better volume when beating. Be gentle when folding the egg whites into the batter to keep the cake light and fluffy.
