A delightful cheesecake combining rich chocolate and creamy peanut butter flavors with Reese’s Peanut Butter Cups.


Ingredients

  • 4 tablespoons butter, melted
  • 2 (8-ounce) packages cream cheese, softened
  • 1/2 cup sugar
  • 2 large eggs
  • 2 tablespoons sour cream
  • 1 teaspoon vanilla extract
  • 2 tablespoons flour
  • 3/4 cup chocolate chips
  • 1 teaspoon shortening
  • 1 (8-ounce) package cream cheese, softened (for mousse)
  • 1 (8-ounce) container Cool Whip, thawed
  • 1/2 cup peanut butter
  • 2 cups chopped Reese’s Peanut Butter Cups

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with 24 cupcake liners.
  2. In a bowl, mix chocolate cookie crumbs and melted butter, then spoon into each cupcake liner to create a crust.
  3. In a mixing bowl, beat the cream cheese, sugar, and vanilla extract until creamy, then add eggs, sour cream, and flour; mix well.
  4. In a microwave-safe bowl, melt chocolate chips and shortening in 30-second intervals, stirring until smooth. Let cool slightly, then add to cream cheese mixture and beat until combined.
  5. Spoon cheesecake batter into liner, filling each about 3/4 full, and bake for 22-24 minutes. Let cool for 3-4 minutes in the pan before transferring to a wire rack.
  6. In another mixing bowl, beat cream cheese and peanut butter until creamy, then gently fold in Cool Whip until smooth.
  7. Top cooled cheesecakes with peanut butter mousse and sprinkle with chopped Reese’s Peanut Butter Cups.
  8. Refrigerate in a sealed container until ready to serve.

Notes

For the best results, ensure cream cheese is at room temperature and consider using a food processor for crushing cookies.
