A delicious dessert that combines rich chocolate with the tartness of fresh raspberries, featuring moist chocolate cake layers and a smooth chocolate ganache.

- 1 1/2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup sugar
- 2 eggs
- 1 cup buttermilk
- 1 tsp vanilla extract
- 1 1/2 cups fresh raspberries
- 1/4 cup sugar (for filling)
- 1 tbsp lemon juice
- 1 1/2 cups dark chocolate chips
- 3/4 cup heavy cream
- 2 tbsp butter (for ganache)
Instructions
- Preheat your oven to 350°F (175°C). Grease and line two 8-inch cake pans with parchment paper.
- In a bowl, mix the flour, cocoa powder, baking soda, and salt.
- In a separate bowl, beat the softened butter and sugar together. Then add the eggs, buttermilk, and vanilla to the butter mixture.
- Combine the wet and dry ingredients until smooth.
- Divide the batter evenly into the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool completely.
- For the raspberry filling, simmer the fresh raspberries, 1/4 cup sugar, and lemon juice in a small pot until the mixture thickens. Let it cool.
- To make the ganache, heat the heavy cream in a small pan until it’s hot (but not boiling).
- Pour the hot cream over the dark chocolate chips in a bowl, stir until smooth, and mix in the butter.
- To assemble, spread the raspberry filling between the cooled cake layers.
- Pour the ganache over the top of the cake and let it drip down the sides.
- Chill the cake in the refrigerator before serving to achieve a rich, truffle-like texture.
Notes
Serve chilled with fresh raspberries or whipped cream. Store in an airtight container for up to 5 days or freeze for up to three months.
