Chocolate Raspberry Truffle Cake

Description

A delicious cake combining rich chocolate and sweet raspberries, perfect for special occasions.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh raspberries
  • 1/4 cup sugar (for filling)
  • 1 tbsp lemon juice
  • 1 1/2 cups dark chocolate chips
  • 3/4 cup heavy cream
  • 2 tbsp butter (for ganache)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two 8-inch cake pans.
  2. In a bowl, mix together the flour, cocoa powder, baking soda, and salt.
  3. In another bowl, beat the softened butter and sugar together until creamy.
  4. Add the eggs, buttermilk, and vanilla to the butter mixture, and mix well.
  5. Combine the wet and dry ingredients until just mixed. Divide the batter equally between the two prepared pans.
  6. Bake the cakes in the oven for 30-35 minutes or until a toothpick comes out clean. Let them cool completely in the pans.
  7. In a small saucepan, simmer the raspberries, 1/4 cup of sugar, and lemon juice until it thickens. Set the mixture aside to cool.
  8. For the ganache, heat the heavy cream until it just begins to simmer, then pour it over the chocolate chips in a bowl. Stir until the chocolate melts and becomes smooth, then mix in the butter.
  9. Once the cakes are cool, spread the raspberry filling between the layers of cake.
  10. Finally, pour the ganache over the top of the cake.
  11. Chill the cake in the fridge before serving to let the flavors meld.

Notes

Serve chilled or at room temperature. Consider adding a dollop of whipped cream for an extra special touch.
