- 4 large eggs
- 100g granulated sugar
- 1 teaspoon vanilla extract
- 75g all-purpose flour
- 25g unsweetened cocoa powder
- 1/2 teaspoon baking powder
- Pinch of salt
- 200g fresh raspberries
- 250ml heavy cream
- 50g powdered sugar
- 1 teaspoon vanilla extract
- Chocolate shavings (for garnish)
Instructions
- Preheat your oven to 180°C (350°F) and line a 10×15 inch baking tray with parchment paper. Whisk together the eggs and granulated sugar until pale and fluffy, about 5-7 minutes. Add the vanilla extract.
- Sift together flour, cocoa powder, baking powder, and salt, then fold into the egg mixture.
- Pour the batter into the prepared tray, spread evenly, and bake for 10-12 minutes until it springs back when touched. Cool for a few minutes, then invert onto a towel dusted with powdered sugar and peel off the parchment.
- Whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form, then fold in the raspberries.
- Spread the filling evenly on the cake, roll tightly, and wrap in plastic wrap. Refrigerate for at least 1 hour to set.

Notes
For best flavor, use fresh raspberries and ensure the cake does not overbake. Can substitute raspberries with other fruits like strawberries or blueberries.
