  • 1/4 cup white chocolate chips (optional, for drizzling)

Instructions

  1. Prepare the Truffle Filling: Place the chopped semi-sweet chocolate in a heatproof bowl. Heat the heavy cream in a saucepan over medium heat until it begins to simmer (do not boil). Pour the hot cream over the chocolate and let it sit for 2-3 minutes to melt. Stir until smooth and fully combined.
  2. Add Peppermint Flavor: Mix in the peppermint extract to the chocolate ganache. Let the mixture cool for about 15 minutes at room temperature.
  3. Chill the Ganache: Refrigerate the ganache for 1-2 hours until firm enough to shape.
  4. Shape the Truffles: Use a small spoon or melon baller to scoop portions of the ganache. Roll each portion into a smooth ball with your hands.
  5. Coat the Truffles: Roll the truffles in crushed peppermint candies or candy canes for a festive coating. For variations, coat some in cocoa powder or powdered sugar.
  6. Optional White Chocolate Drizzle: Melt the white chocolate chips in the microwave in 20-second intervals, stirring between intervals, until smooth. Drizzle over the coated truffles for added decoration.
  7. Chill Again: Place the coated truffles back in the refrigerator for 30 minutes to fully set.
  8. Serve and Store: Serve the truffles at room temperature, or store in an airtight container in the refrigerator for up to one week.
