Ingredients

  • 1 1/2 cups chocolate cookie crumbs (like Oreo or chocolate graham crackers)
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup creamy peanut butter
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 1/2 cups heavy whipping cream
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the chocolate cookie crumbs, sugar, and melted butter in a bowl. Mix well.
  3. Press the mixture into the bottom and sides of a 9-inch pie pan to form a crust.
  4. Bake for 8 minutes, then remove from the oven and set aside to cool.
  5. In a large mixing bowl, beat together the peanut butter, cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  6. In a separate bowl, beat the heavy whipping cream until stiff peaks form.
  7. Gently fold the whipped cream into the peanut butter mixture until combined.
  8. Spread the peanut butter filling evenly into the cooled crust, smoothing it out with a spatula.
  9. Refrigerate for at least 3 hours or until the filling is firm.
  10. In a microwave-safe bowl, heat the heavy cream until it just begins to simmer (about 30-45 seconds in the microwave).
  11. Add the chocolate chips and let them sit for a minute before stirring until smooth and glossy.
  12. Allow the ganache to cool slightly before drizzling it over the chilled peanut butter filling.
  13. Once the ganache has set, slice and serve the pie. Optionally, pipe whipped cream on top and drizzle with extra chocolate ganache.

Notes

For added texture, consider topping with crushed peanuts. This pie can be prepared a day in advance and stored in the refrigerator.
