Ingredients

  • 3/4 cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1/4 cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
  2. In a large bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add milk, oil, eggs, and vanilla to the dry ingredients. Mix until smooth. Stir in boiling water (the batter will be thin).
  4. Divide the batter between the prepared pans and bake for 30-35 minutes. Allow the cakes to cool completely.
  5. For the filling, beat peanut butter and softened butter together until creamy. Gradually add powdered sugar and heavy cream until fluffy.
  6. For the ganache, heat heavy cream until steaming. Pour it over the chocolate chips and let it sit for 5 minutes. Stir until smooth.
  7. Assemble the cake: Spread peanut butter filling between the layers. Pour ganache over the top and let it drip down the sides of the cake.
  8. Slice and enjoy!

For best results, ensure all ingredients are at room temperature. Store in an airtight container for up to 3 days at room temperature or up to a week in the fridge.
