- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 large eggs
- 2 tsp vanilla extract
- 1 cup boiling water
- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1/4 cup heavy cream
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
- In a large bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add milk, oil, eggs, and vanilla to the dry ingredients. Mix until smooth. Stir in boiling water (the batter will be thin).
- Divide the batter between the prepared pans and bake for 30-35 minutes. Allow the cakes to cool completely.
- For the filling, beat peanut butter and softened butter together until creamy. Gradually add powdered sugar and heavy cream until fluffy.
- For the ganache, heat heavy cream until steaming. Pour it over the chocolate chips and let it sit for 5 minutes. Stir until smooth.
- Assemble the cake: Spread peanut butter filling between the layers. Pour ganache over the top and let it drip down the sides of the cake.
- Slice and enjoy!
