  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1/4 cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
  2. In a large bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt together.
  3. Add the milk, oil, eggs, and vanilla to the dry ingredients. Mix until smooth. Then stir in boiling water; the batter will be thin.
  4. Divide the batter evenly between the two pans and bake for 30-35 minutes. Allow the cakes to cool completely after baking.
  5. For the filling, beat together the peanut butter and softened butter until creamy. Gradually add the powdered sugar and heavy cream, mixing until fluffy.
  6. To make the ganache, heat the cream until steaming, then pour it over the chocolate chips. Let it sit for 5 minutes, then stir until smooth.
  7. Assemble the cake: Spread the peanut butter filling between the cooled cake layers. Pour ganache over the top of the cake and let it drip down the sides.
  8. Slice and enjoy!
