Delightful cookies combining rich chocolate and creamy peanut butter chips, soft and fudgy.

- 1 cup cold butter, cubed
- 1 cup light brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 2 large eggs
- 1 teaspoon vanilla extract
- 3/4 teaspoon baking soda
- 3/4 teaspoon kosher salt
- 2 1/2 cups all-purpose flour
- 2 cups peanut butter chips
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a stand mixer, mix cold butter and both sugars on medium speed for 2 minutes until light and fluffy.
- Add cocoa powder and mix until combined.
- With the mixer on medium speed, add eggs, vanilla extract, baking soda, and salt. Mix for 1 minute until smooth.
- Turn the mixer to low, slowly add flour, and mix until just combined. Stir in peanut butter chips.
- Scoop dough using a 3-tablespoon cookie scoop onto the prepared baking sheet.
- Bake for 9-11 minutes until edges are set; centers may look slightly under-baked.
- Let cookies cool on the baking sheet for 3 minutes, then transfer to a wire rack to cool completely. Enjoy!
Notes
Use cold butter for best texture. Don’t overmix once adding flour. Space cookies well for even baking.
