Description

Delightful cookies combining rich chocolate and creamy peanut butter chips, soft and fudgy.


Ingredients

  • 1 cup cold butter, cubed
  • 1 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon kosher salt
  • 2 1/2 cups all-purpose flour
  • 2 cups peanut butter chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a stand mixer, mix cold butter and both sugars on medium speed for 2 minutes until light and fluffy.
  3. Add cocoa powder and mix until combined.
  4. With the mixer on medium speed, add eggs, vanilla extract, baking soda, and salt. Mix for 1 minute until smooth.
  5. Turn the mixer to low, slowly add flour, and mix until just combined. Stir in peanut butter chips.
  6. Scoop dough using a 3-tablespoon cookie scoop onto the prepared baking sheet.
  7. Bake for 9-11 minutes until edges are set; centers may look slightly under-baked.
  8. Let cookies cool on the baking sheet for 3 minutes, then transfer to a wire rack to cool completely. Enjoy!

Notes

Use cold butter for best texture. Don’t overmix once adding flour. Space cookies well for even baking.
