Deliciously soft and chewy cookies filled with rich chocolate and peanut butter flavors.

- 1 cup cold butter, cubed
- 1 cup light brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 2 large eggs
- 1 teaspoon vanilla extract
- 3/4 teaspoon baking soda
- 3/4 teaspoon kosher salt
- 2 1/2 cups all-purpose flour
- 2 cups peanut butter chips
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a stand mixer with a paddle attachment, mix the butter and both sugars on medium speed for 2 minutes until light and fluffy. Scrape down the sides as needed.
- Add the cocoa powder and mix until combined.
- With the mixer still on medium, add the eggs, vanilla, baking soda, and salt. Mix for 1 minute until smooth.
- Turn the mixer to low and slowly add in the flour, mixing until just combined. Stir in the peanut butter chips.
- Scoop the dough using a 3-tablespoon cookie scoop onto the prepared baking sheet.
- Bake for 9-11 minutes until the edges are set but the centers may appear slightly under-baked.
- Let the cookies cool on the baking sheet for 3 minutes, then transfer them to a wire rack to cool completely.
Notes
For chewier cookies, ensure your butter is cold and don’t overmix after adding the flour.
