Description

A delightful vegan dessert combining rich chocolate with the zesty flavor of oranges, perfect for any occasion.


Ingredients

  • 280g all-purpose flour
  • 280g granulated sugar
  • 35g cocoa powder
  • 1.5 tsp baking soda
  • 1/2 tsp salt
  • 200ml warm soy milk
  • 100ml orange juice
  • 1.5 tbsp apple cider vinegar
  • 120g vegetable oil
  • 1 tsp vanilla extract
  • 2 tsp orange extract
  • 400g silken tofu
  • 400g dark chocolate, chopped
  • 150ml orange juice (for mousse)
  • 1 tbsp maple syrup
  • 100g dark chocolate (for ganache)
  • 100g soy cream or milk

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Sieve together the flour, sugar, cocoa powder, baking soda, and salt in a large mixing bowl.
  3. Warm the soy milk and add the apple cider vinegar. Let it curdle for 10 minutes.
  4. Line an 8-inch cake tin with parchment paper. Add the orange juice, vegetable oil, and extracts to the soy milk mixture.
  5. Create a well in the dry ingredients and add the wet ingredients. Whisk until combined.
  6. Pour the batter into the tin and bake for 40-45 minutes. Let cool.
  7. Slice the cooled cake into two layers.
  8. Blend silken tofu, orange juice, orange extract, vanilla extract, and maple syrup until smooth.
  9. Melt dark chocolate and combine it with the tofu mixture.
  10. Pour the mousse onto the bottom cake layer and chill.
  11. Add the second cake layer and refrigerate.
  12. Heat soy cream until simmering, then pour over chopped chocolate. Stir until smooth.
  13. Pour ganache over the cake. Slice and enjoy.

Notes

Make sure all your ingredients are at room temperature for better mixing. Let the cake cool completely before slicing to avoid crumbling.
