A delightful vegan dessert that combines rich chocolate with zesty orange, featuring a creamy mousse layer.


Ingredients

  • 280g all-purpose flour
  • 280g granulated sugar
  • 35g cocoa powder
  • 1.5 tsp baking soda
  • 1/2 tsp salt
  • 200ml soy milk (warm)
  • 100ml orange juice
  • 1.5 tbsp apple cider vinegar
  • 120g vegetable oil
  • 1 tsp vanilla extract
  • 2 tsp orange extract
  • 400g silken tofu
  • 400g dark chocolate, chopped
  • 150ml orange juice
  • 1 tbsp maple syrup
  • 100g dark chocolate
  • 100g soy cream or milk

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Sieve together the flour, sugar, cocoa powder, baking soda, and salt in a large bowl.
  3. Warm the soy milk (about 60 seconds in the microwave) and add apple cider vinegar to curdle it, creating buttermilk.
  4. Line an 8-inch cake tin with parchment paper. Add orange juice, vegetable oil, and extracts to the buttermilk mixture.
  5. Mix the wet and dry ingredients until fully incorporated.
  6. Pour the batter into the prepared cake tin and bake for 40-45 minutes. Let it cool completely.
  7. Slice the cake into two layers. For the mousse, blend the silken tofu, orange juice, extracts, and maple syrup until smooth.
  8. Melt the dark chocolate and mix it with the tofu blend until well incorporated.
  9. Pour the mousse onto the bottom layer in the tin and chill for 1-2 hours.
  10. Place the second layer of cake on top and refrigerate. For the ganache, heat the soy cream or milk, pour it over the chopped chocolate, and stir until smooth.
  11. Pour the ganache over the cake. Slice and enjoy!

Notes

For a stronger orange flavor, consider adding more orange extract to the mousse. Store the cake tightly wrapped in the refrigerator for up to 3-4 days.
