- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1/2 cup unsalted butter, melted
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup heavy cream
- 8 ounces semi-sweet chocolate, chopped
- 1/4 cup powdered sugar
- 1 teaspoon gelatin (optional for stability)
- 1/4 cup water (for gelatin, if used)
- Chocolate glaze (for topping)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
- In a bowl, combine flour, sugar, cocoa powder, baking powder, and salt.
- In another bowl, whisk together melted butter, eggs, and vanilla.
- Combine the wet and dry ingredients until just mixed.
- Pour the batter into the prepared cake pan and bake for 25-30 minutes. Allow to cool.
- For the mousse, melt the chocolate in a heatproof bowl over simmering water.
- In a separate bowl, whip the heavy cream until soft peaks form, then gradually add powdered sugar.
- Gently fold the melted chocolate into the whipped cream until blended.
- If using gelatin, dissolve it in warm water and mix into the mousse for stability.
- Layer the mousse on top of the cooled cake and chill until set.
- Once set, pour the chocolate glaze on top before serving. Enjoy!
Notes
Make sure your cake is completely cool before adding the mousse on top. Whip the cream just until soft peaks form; don’t overbeat it. If using gelatin, ensure it is fully dissolved to avoid clumps in your mousse.
