  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 8 oz semi-sweet chocolate, chopped
  • 2 tablespoons unsalted butter
  • 3 large eggs, separated
  • 1/4 cup granulated sugar
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • Whipped cream (for garnish)
  • Chocolate shavings (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour an 8-inch round cake pan.
  2. In a bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  3. Cream the softened butter and sugar together until light and fluffy in a large mixing bowl.
  4. Beat in eggs one at a time, followed by vanilla extract.
  5. Gradually add dry ingredients to wet mixture, alternating with buttermilk, and mix until just combined.
  6. Pour batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely.
  7. In a heatproof bowl, melt the chopped chocolate and butter over simmering water until smooth. Let cool slightly.
  8. Beat egg whites in a separate bowl until soft peaks form, then gradually add sugar and continue beating until stiff peaks form.
  9. Stir egg yolks into the cooled chocolate mixture.
  10. Gently fold the whipped egg whites into the chocolate mixture.
  11. In another bowl, whip heavy cream and vanilla extract until soft peaks form, then fold into chocolate mixture.
  12. Once the cake has cooled, slice it in half horizontally.
  13. Spread half of the mousse over the first layer, top with the second layer, and spread remaining mousse on top.
  14. Refrigerate for at least 4 hours until mousse is set.
  15. Garnish with whipped cream and chocolate shavings before serving.
