Delicious dessert combining fudgy brownies with light and airy chocolate mousse.

- 1 cup unsalted butter, melted
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 4 large eggs
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 tsp salt
- 1 tsp baking powder
- 1/2 cup chocolate chips
- 1 1/2 cups heavy cream
- 8 oz semi-sweet chocolate, chopped
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
- In a large mixing bowl, whisk together the melted butter, granulated sugar, brown sugar, eggs, and vanilla extract until smooth.
- Sift in the flour, cocoa powder, salt, and baking powder. Stir until just combined, then fold in the chocolate chips.
- Pour the brownie batter into the prepared pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted comes out with a few moist crumbs.
- Let the brownies cool completely.
- For the mousse, heat the heavy cream in a small saucepan over medium heat until it just starts to simmer. Remove from heat and add the chopped chocolate. Stir until the chocolate is fully melted and the mixture is smooth.
- Stir in the powdered sugar and vanilla extract. Let this mixture cool to room temperature, then chill in the refrigerator for 1 hour.
- Once the mousse is chilled, use a hand mixer to whip it until it thickens to a mousse-like consistency.
- Spread the mousse evenly over the cooled brownies. Refrigerate the brownies for at least 2 hours before slicing and serving.
Notes
Serve with a dollop of whipped cream or garnish with chocolate shavings. Store in an airtight container in the fridge for up to 5 days.
