Ingredients

  • 35 Oreo cookies
  • 5 tablespoons unsalted butter, melted
  • 32 ounces cream cheese, softened
  • 1 1⁄2 cups granulated sugar
  • Pinch of salt
  • 2 teaspoons peppermint extract
  • 4 large eggs, room temperature
  • 2⁄3 cup sour cream, room temperature
  • 2⁄3 cup heavy cream
  • 1 cup mini chocolate chips
  • Green food coloring (optional)
  • 4 ounces semi-sweet or bittersweet chocolate, chopped
  • 1⁄2 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (177°C). In a food processor, pulse the Oreo cookies until finely ground and mix with melted butter. Press the mixture into the bottom of a springform pan and bake for 10 minutes.
  2. In a mixer, beat the softened cream cheese and granulated sugar until smooth. Add a pinch of salt, peppermint extract, and eggs one at a time, mixing well after each addition. Fold in sour cream, heavy cream, and mini chocolate chips; optionally add green food coloring.
  3. Reduce the oven temperature to 325°F (160°C). Wrap the springform pan in foil and place it in a water bath. Pour the filling over the crust and bake for 80-90 minutes, then cool in the oven with the door slightly open.
  4. For the ganache, heat 1/2 cup of heavy cream and pour it over the chopped chocolate, whisking until smooth.
  5. After the cheesecake is chilled, pour the ganache over the top and refrigerate until set. Serve with whipped cream and chopped Andes candies if desired.

Notes

Make sure your cream cheese is at room temperature for easy mixing. Always wrap the springform pan tightly with foil to prevent water from seeping in.
