Ingredients

  • 1 1⁄2 cups chocolate cookie crumbs
  • 1⁄2 cup unsalted butter (melted)
  • 16 oz cream cheese (softened)
  • 8 oz mascarpone cheese
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup melted dark chocolate

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine chocolate cookie crumbs and melted butter until well mixed. Press this mixture into the bottom of a springform pan.
  3. In a large mixing bowl, beat the cream cheese, mascarpone cheese, and sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in the melted dark chocolate until fully incorporated.
  6. Pour the cheesecake mixture over the crust in the springform pan.
  7. Bake for 1 hour, or until the center is set.
  8. Let cool, then refrigerate for at least 4 hours or overnight before serving.

Notes

Chill the cheesecake for at least 4 hours to enhance flavor and texture. Store leftovers in the refrigerator for up to 5 days.
