- 1 1⁄2 cups chocolate cookie crumbs
- 1⁄2 cup unsalted butter (melted)
- 16 oz cream cheese (softened)
- 8 oz mascarpone cheese
- 1 cup granulated sugar
- 3 large eggs
- 1 cup melted dark chocolate
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine chocolate cookie crumbs and melted butter until well mixed. Press this mixture into the bottom of a springform pan.
- In a large mixing bowl, beat the cream cheese, mascarpone cheese, and sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in the melted dark chocolate until fully incorporated.
- Pour the cheesecake mixture over the crust in the springform pan.
- Bake for 1 hour, or until the center is set.
- Let cool, then refrigerate for at least 4 hours or overnight before serving.
Notes
Chill the cheesecake for at least 4 hours to enhance flavor and texture. Store leftovers in the refrigerator for up to 5 days.
