- 1/2 cup unsalted butter (melted)
- 16 oz cream cheese (softened)
- 8 oz mascarpone cheese
- 1 cup granulated sugar
- 3 large eggs
- 1 cup melted dark chocolate
Instructions
- Preheat the oven to 325°F (160°C).
- Mix chocolate cookie crumbs with the melted butter and press into the bottom of a springform pan to create the crust.
- In a large bowl, beat cream cheese, mascarpone cheese, and sugar until smooth.
- Add eggs one by one, mixing well after each addition.
- Stir in the melted dark chocolate until fully combined.
- Pour the cheesecake mixture over the crust in the springform pan.
- Bake for 50-60 minutes or until set and slightly firm to the touch.
- Let cool, then refrigerate for at least 4 hours before serving.
