  • 1 1/2 cups chocolate cookie crumbs
  • 1/2 cup unsalted butter (melted)
  • 16 oz cream cheese (softened)
  • 8 oz mascarpone cheese
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup melted dark chocolate

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Mix chocolate cookie crumbs with the melted butter and press into the bottom of a springform pan to create the crust.
  3. In a large bowl, beat cream cheese, mascarpone cheese, and sugar until smooth.
  4. Add eggs one by one, mixing well after each addition.
  5. Stir in the melted dark chocolate until fully combined.
  6. Pour the cheesecake mixture over the crust in the springform pan.
  7. Bake for 50-60 minutes or until set and slightly firm to the touch.
  8. Let cool, then refrigerate for at least 4 hours before serving.
