Description

A moist and rich Chocolate Loaf Cake topped with fluffy whipped ganache, perfect for any occasion.


Ingredients

  • 1 and 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder (unsweetened)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk
  • 1/2 cup hot water
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1/2 cup semi-sweet chocolate chips (for ganache)
  • 1 tablespoon unsalted butter (for ganache)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. In a medium bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  3. In a separate large mixing bowl, beat the softened butter and sugar together until light and fluffy, about 2-3 minutes.
  4. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Start and end with the dry ingredients, mixing until just combined.
  6. Slowly pour in the hot water, stirring until the batter is smooth and well combined.
  7. Gently fold in the chocolate chips. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
  9. While the cake is baking, prepare the ganache. Heat the heavy cream over medium heat until it starts to simmer. Remove from heat and add the chocolate chips and butter. Stir until melted and smooth.
  10. Let the ganache cool slightly, then whip it until light and fluffy.
  11. Once the cake has cooled, spread the whipped ganache generously over the top. Allow it to set for a few minutes before slicing and serving.

Notes

Store leftovers in an airtight container for up to three days. Refrigerate for up to a week or freeze for up to three months.
