- 2/3 cup (165 g) unsalted butter, softened
- 2/3 cup (140 g) caster sugar
- 1 1/2 teaspoons vanilla extract
- 2 egg yolks
- 2/3 cup (133 g) dark chocolate, melted
- 1 1/4 cups (187 g) all-purpose flour, sifted
- 1/3 cup (30 g) cocoa powder, sifted
- 1/4 teaspoon salt
- 1 cup (125 g) hazelnuts, toasted and finely chopped
- 1/2 cup (150 g) chocolate hazelnut spread (e.g., Nutella)
Instructions
- In a medium bowl, whisk together the flour, cocoa powder, and salt.
- In a large bowl, beat the softened butter and sugar on high speed for 2 minutes. Add the vanilla extract, egg yolks, and melted chocolate, mixing until well combined.
- Gradually add the dry ingredients to the wet mixture, using a spatula to mix until a dough forms.
- Scoop out dough (about 1 1/2 tablespoons each) and roll into balls. Coat each ball in finely chopped hazelnuts. Place on a tray and chill in the refrigerator for 2 hours.
- Preheat your oven to 160°C (320°F) with a fan (170°C/340°F without a fan). Line two baking trays with parchment paper. Spread the cookies on the trays and bake one tray at a time for 8 minutes.
- Allow the cookies to cool completely on a wire rack.
- Once cooled, use a measuring tablespoon to indent the center of each cookie. Use a round cookie cutter to reshape them into a round form if needed.
- Spoon or pipe the chocolate hazelnut spread into the center of each cookie. Let set completely before serving.
Notes
For best results, chill the dough to maintain shape. Use walnuts or almonds if hazelnuts are unavailable.
