- 2/3 cup (165 g) unsalted butter, softened
- 2/3 cup (140 g) caster sugar
- 1 1/2 teaspoons vanilla extract
- 2 egg yolks
- 2/3 cup (133 g) dark chocolate, melted
- 1 1/4 cups (187 g) all-purpose flour, sifted
- 1/3 cup (30 g) cocoa powder, sifted
- 1/4 teaspoon salt
- 1 cup (125 g) hazelnuts, toasted and finely chopped
- 1/2 cup (150 g) chocolate hazelnut spread (e.g., Nutella)
Instructions
- In a medium bowl, whisk together the flour, cocoa powder, and salt.
- In a large bowl, beat the softened butter and sugar on high speed for 2 minutes. Add the vanilla extract, egg yolks, and melted chocolate, mixing until well combined.
- Gradually add the dry ingredients to the wet mixture, using a spatula to mix until a dough forms.
- Scoop out dough (about 1 1/2 tablespoons each) and roll into balls. Coat each ball in finely chopped hazelnuts. Place on a tray and chill in the refrigerator for 2 hours.
- Preheat your oven to 160°C (320°F) with a fan (170°C/340°F without a fan). Line two baking trays with parchment paper.
- Spread the cookies on the trays and bake one tray at a time for 8 minutes. Allow the cookies to cool completely on a wire rack.
- Once cooled, use a measuring tablespoon to indent the center of each cookie. Use a round cookie cutter to reshape them into a round form if needed.
- Spoon or pipe the chocolate hazelnut spread into the center of each cookie. Let set completely before serving.
Notes
Store in an airtight container at room temperature for about a week. They can also be frozen in a freezer-safe container.
