Ingredients

  • 1 cup graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup melted butter
  • 12 oz bittersweet chocolate chips
  • 24 oz cream cheese, room temperature
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 3 tbsp unsweetened cocoa powder
  • 5 large eggs
  • 3/4 cup heavy whipping cream
  • 2 tsp vanilla extract
  • 6 oz semi-sweet chocolate bar
  • 2/3 cup heavy whipping cream
  • 2 tbsp butter, melted
  • Reddi-Wip for garnish
  • Chocolate syrup for garnish

Instructions

  1. Preheat your oven to 325°F (163°C). Crush the graham crackers into fine crumbs.
  2. In a bowl, combine the crumbs, granulated sugar, and cocoa powder. Stir in the melted butter.
  3. Press the mixture into the bottom of a 9-inch springform pan.
  4. Melt the bittersweet chocolate.
  5. In a food processor, blend the cream cheese until smooth. Add the sugars, cocoa powder, eggs, cream, and vanilla, blending until smooth.
  6. Add the melted chocolate and blend again. Pour this mixture over the crust in the springform pan.
  7. Bake for 75-80 minutes until set but slightly jiggly in the center. Cool and refrigerate for 4-6 hours.
  8. For the ganache, heat the 2/3 cup of cream and 2 tbsp of butter. Stir in broken pieces of the semi-sweet chocolate bar until melted.
  9. Pour the ganache over the cooled cheesecake and allow it to set.
  10. Slice the cheesecake and serve with chocolate syrup and Reddi-Wip.

Notes

Ensure cream cheese is at room temperature for a smoother filling. Avoid over-mixing once the eggs are added to prevent cracks.
