Description

A decadent dessert combining rich chocolate flavors with a smooth cream cheese filling over a crunchy graham cracker crust, topped with luscious chocolate ganache.


Ingredients

  • 1 cup graham crackers, crushed
  • 1/3 cup granulated sugar
  • 1/4 cup baking cocoa
  • 1/4 cup melted butter
  • 12 oz bittersweet chocolate chips
  • 24 oz cream cheese, room temperature
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 3 tbsp baking cocoa powder
  • 5 large eggs
  • 3/4 cup heavy whipping cream
  • 2 tsp vanilla extract
  • 6 oz semi-sweet chocolate bar
  • 2/3 cup heavy whipping cream
  • 2 tbsp butter, melted
  • Reddi-Wip for garnish
  • Chocolate syrup for garnish

Instructions

  1. Preheat your oven to 325°F (163°C). Crush graham crackers until finely crushed.
  2. Melt butter and mix it with graham cracker crumbs, granulated sugar, and cocoa. Press this mixture into the bottom of a springform pan.
  3. Melt the chocolate chips over a double boiler.
  4. In a food processor, blend cream cheese, granulated sugar, brown sugar, and cocoa until smooth. Add eggs, heavy cream, and vanilla, mixing until everything is well combined. Pour this mixture over the prepared crust.
  5. Bake the cheesecake in the preheated oven for 75-80 minutes until it is jiggly in the center. Once done, cool it on a wire rack, then refrigerate for 4-6 hours to set.
  6. Heat 2/3 cup of cream and melted butter in a small pot until it begins to bubble. Add the chopped semi-sweet chocolate bar and stir until it is smooth and glossy.
  7. Pour the ganache over the chilled cheesecake and let it set for a little while.
  8. Slice the cheesecake and garnish it with chocolate syrup and whipped cream before serving.

Notes

Serve chilled and store covered in the refrigerator. Can be frozen for up to three months.
