- 1 cup graham crackers, crushed
- 1/3 cup granulated sugar
- 1/4 cup baking cocoa
- 1/4 cup melted butter
- 12 oz bittersweet chocolate chips (Ghirardelli preferred)
- 24 oz cream cheese, room temperature
- 1 cup granulated sugar
- 1/4 cup brown sugar
- 3 tbsp baking cocoa powder
- 5 large eggs
- 3/4 cup heavy whipping cream
- 2 tsp vanilla extract
- 6 oz semi-sweet chocolate bar (for ganache and shavings)
- 2/3 cup heavy whipping cream (for ganache)
- 2 tbsp butter, melted (for ganache)
- Reddi-Wip (for garnishing)
- Chocolate syrup (for garnishing)
Instructions
- Preheat your oven to 325°F (160°C).
- In a small bowl, combine crushed graham crackers, granulated sugar, and cocoa powder. Mix in the melted butter and press the mixture into the bottom of a 9-inch springform pan.
- Melt the bittersweet chocolate chips in a double boiler.
- In a food processor, blend the softened cream cheese until smooth. Add the granulated sugar, brown sugar, and cocoa powder, and mix well. Then, add the eggs, heavy cream, and vanilla extract, mixing again before adding the melted chocolate.
- Pour the cheesecake filling into the prepared crust and bake for 75-80 minutes until set. Cool in the pan and refrigerate for 4-6 hours.
- For the ganache, heat the whipping cream and melted butter in the microwave. Add pieces of semi-sweet chocolate and stir until melted.
- Once the ganache cools, pour it over the cheesecakes.
- Optionally garnish with chocolate curls and serve with chocolate syrup and Reddi-Wip.
Notes
Make sure the cream cheese is at room temperature for a smooth filling. Avoid overmixing the cheesecake batter; this helps keep it light and fluffy.
