Description

A rich and delicious layered chocolate cake with fudge filling and ganache, perfect for any celebration.


Ingredients

  • 1 1/2 cups granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda

  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1 cup heavy cream (for fudge filling)
  • 8 oz semi-sweet chocolate (chopped, for fudge filling)
  • 2 tbsp unsalted butter (for fudge filling)
  • 8 oz semi-sweet chocolate (chopped, for ganache)
  • 1/2 cup heavy cream (for ganache)
  • 1 tbsp unsalted butter (for ganache)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
  2. In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until smooth. Gradually add the boiling water, mixing until combined (the batter will be thin).
  4. Divide the batter evenly between the two cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  5. In a saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and add the chopped semi-sweet chocolate and butter. Stir until smooth and mixed. Let it cool slightly to thicken.
  6. Heat the heavy cream in a saucepan over medium heat until simmering. Remove from heat and add the chopped semi-sweet chocolate and butter. Stir until smooth and glossy. Let it cool slightly before using.
  7. Once the cakes are completely cooled, place one cake layer on a serving plate. Spread a layer of fudge filling over the top. Add the second cake layer and press gently. Pour the ganache over the top of the cake, allowing it to drip down the sides.
  8. Let the ganache set for a few minutes before slicing. Serve and enjoy the rich, decadent layers of chocolate goodness!

Notes

For extra indulgence, serve with whipped cream or vanilla ice cream. Store leftovers in an airtight container in the refrigerator for up to 5 days.
