Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
  2. In a large bowl, whisk together the sugar, cocoa powder, and oil until well combined. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  3. In a separate bowl, sift together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  4. Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Let the layers cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  5. For the Fudge Filling: Heat the heavy cream in a saucepan over medium heat until it begins to simmer. Remove from heat. Pour the hot cream over the chocolate chips in a heatproof bowl. Let it sit for 2-3 minutes, then whisk until smooth and glossy. Stir in the butter until fully melted and incorporated. Allow the fudge to cool slightly to thicken.
  6. Assemble the cake: Place one brownie cake layer on a serving plate. Spread a generous layer of fudge filling over the top. Add the second brownie layer and spread more fudge filling over the top and sides, smoothing it with an offset spatula.
  7. Decorate: If desired, drizzle the cake with chocolate ganache or top with whipped cream. Garnish with chocolate shavings, chips, or any other decorative toppings you like.
  8. Chill and serve: Refrigerate the cake for at least 1 hour to allow the fudge to set. Bring to room temperature before serving.
