- 1 1/2 cups all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/2 tsp. baking powder
- 1/2 cup unsalted butter, room temperature
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp. vanilla extract
- 1/2 cup whole milk
- 1/2 tsp. salt
- 2 cups fresh or frozen cherries, chopped
- 1/2 cup sugar (for cherry filling)
- 1 tsp. cornstarch
- 2 tbsp water (for cherry filling)
- 1 tbsp lemon juice
- 2 cups heavy cream
- 1/4 cup powdered sugar
- 1 tsp. vanilla extract (for whipped cream)
- Dark chocolate curls (for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and grease two 8-inch round pans.
- In a large bowl, beat the room temperature butter and granulated sugar until fluffy. Add in the eggs and vanilla extract.
- In another bowl, combine the all-purpose flour, cocoa powder, baking powder, and salt. Fold in these dry ingredients, alternating with the whole milk, to the butter mixture. Mix until well combined.
- Pour the batter evenly into the prepared pans and bake for 25-30 minutes, or until a toothpick comes out clean.
- For the cherry filling, cook the chopped cherries with sugar over medium heat until they start to soften. Mix cornstarch and water in a separate bowl, then add this mixture to the cherries to thicken. Stir in lemon juice and let it cool.
- Once the cakes are cooled, spread the cherry filling between the layers of cake.
- Top the cake with whipped cream made from heavy cream, powdered sugar, and vanilla extract. Spread it over the top and sides.
- Finish by adding dark chocolate curls on top for a beautiful touch.
Notes
Store leftover cake in an airtight container in the refrigerator for up to 3 days or freeze for up to a month.
