Ingredients

  • 2 free-range or organic eggs
  • 15g olive oil
  • 1 tsp vanilla essence
  • 100g yogurt (vegetable)
  • 80g vegetable drink (soy)
  • 50g pitted dates
  • 120g oat flour
  • 20g pure cocoa
  • 10g baking powder
  • 30g 85% chocolate (for filling)
  • 30g cashew cream (for filling)
  • 100g 85% chocolate (for topping)
  • 1 tbsp coconut oil (for topping)
  • 1 dessert spoon cashew cream (for topping)

Instructions

  1. Blend ripe dates with eggs, vanilla essence, vegetable drink, yogurt, and olive oil until smooth.
  2. Sift together oat flour, cocoa, and baking powder in a separate bowl.
  3. Mix wet ingredients with dry ingredients until well combined.
  4. Pour the dough into donut molds and microwave at maximum power for 2 minutes.
  5. Let donuts cool slightly in the mold, then transfer to a rack to cool completely.
  6. Melt 30g of chocolate and mix with cashew cream, then fill the center of each donut.
  7. Refrigerate filled donuts until the filling hardens.
  8. Melt 100g of chocolate with coconut oil, dip each donut, and refrigerate to set.
  9. Decorate the top of each donut with stripes of leftover chocolate mixed with cashew cream.

Notes

For variations, replace cashew cream with almond cream or use a pinch of salt for richer chocolate flavor. Store in an airtight container for up to 3 days, or freeze for longer storage.
