  • 1 cup fresh strawberries, pureed
  • 1/4 cup powdered sugar
  • 1 1/2 cups heavy cream, chilled
  • 2 teaspoons unflavored gelatin
  • 2 tablespoons cold water
  • 1 cup semisweet chocolate chips
  • 1/2 cup heavy cream for ganache
  • Fresh strawberries for decoration, dipped in melted chocolate

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 8-inch round cake pans.
  2. Whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
  3. Add eggs, milk, oil, and vanilla to the dry ingredients, and beat until smooth.
  4. Slowly stir in boiling water, pour batter into prepared pans, and bake for 25-30 minutes. Let cool.
  5. For the mousse, bloom gelatin in cold water. Heat strawberry puree and powdered sugar; stir in gelatin until dissolved and cool.
  6. Whip heavy cream to stiff peaks; fold in cooled strawberry mixture. Refrigerate for 30 minutes.
  7. Assemble the cake by layering chocolate cake and strawberry mousse, refrigerate for 1 hour.
  8. Make ganache by heating heavy cream and pouring over chocolate chips; let sit and stir until smooth.
  9. Pour ganache over the cake and decorate with dipped strawberries.
