- 1 1/2 cups crushed graham crackers
- 5 tablespoons melted butter
- 2 (8 oz) packages cream cheese, softened
- 3/4 cup sugar
- 2 large eggs
- 1/2 cup sour cream
- 1 cup mascarpone cheese
- 1 cup whipped cream
- 1/4 cup sugar
- Strawberry sauce (for drizzle)
- Fresh strawberries (for garnish)
Instructions
- Preheat the oven to 325°F (165°C).
- In a mixing bowl, combine crushed graham crackers and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the base.
- In another bowl, beat cream cheese and sugar until smooth. Add eggs, one at a time, mixing well after each addition. Stir in sour cream until well combined. Pour the mixture over the crust in the springform pan.
- Bake for 30-35 minutes or until set. Remove from oven and let cool.
- In a separate bowl, beat mascarpone cheese, whipped cream, and sugar until smooth. Spread this mixture over the cooled baked layer.
- Refrigerate the cake for at least 240 minutes (4 hours) or until set.
- Before serving, drizzle with strawberry sauce and garnish with fresh strawberries.
Notes
Make sure cream cheese is softened to room temperature for easier blending. Chilling overnight can create a firmer mousse layer.
