Ingredients

  • 1 1/2 cups crushed graham crackers
  • 5 tablespoons melted butter
  • 2 (8 oz) packages cream cheese, softened
  • 3/4 cup sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 cup mascarpone cheese
  • 1 cup whipped cream
  • 1/4 cup sugar
  • Strawberry sauce (for drizzle)
  • Fresh strawberries (for garnish)

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a mixing bowl, combine crushed graham crackers and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the base.
  3. In another bowl, beat cream cheese and sugar until smooth. Add eggs, one at a time, mixing well after each addition. Stir in sour cream until well combined. Pour the mixture over the crust in the springform pan.
  4. Bake for 30-35 minutes or until set. Remove from oven and let cool.
  5. In a separate bowl, beat mascarpone cheese, whipped cream, and sugar until smooth. Spread this mixture over the cooled baked layer.
  6. Refrigerate the cake for at least 240 minutes (4 hours) or until set.
  7. Before serving, drizzle with strawberry sauce and garnish with fresh strawberries.

Notes

Make sure cream cheese is softened to room temperature for easier blending. Chilling overnight can create a firmer mousse layer.
