Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup whole milk
  • 1/2 cup boiling water
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract (for cream filling)
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream (for chocolate glaze)
  • 2 tbsp unsalted butter (for chocolate glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 8-inch round cake pans by greasing them lightly.
  2. Sift together the flour, baking powder, baking soda, salt, and cocoa powder in a bowl.
  3. In another bowl, mix the granulated sugar and softened butter until creamy. Add the eggs and vanilla extract, mixing well. Gradually add the dry ingredients.
  4. Pour in the whole milk, then stir in the boiling water until well combined; the batter will be thin.
  5. Divide the batter evenly between the two prepared pans and bake for 25-30 minutes, or until a toothpick comes out clean.
  6. While the cake bakes, whip the heavy cream with powdered sugar and 1 tsp of vanilla extract until stiff peaks form.
  7. For the chocolate glaze, melt chocolate chips with 1/2 cup of heavy cream and 2 tbsp of butter in a small saucepan over low heat; stir until smooth.
  8. Once the cakes have cooled, place one cake layer on a serving plate. Spread the whipped cream filling over the top, then place the second cake on top.
  9. Pour the chocolate glaze over the cake, allowing it to drip down the sides.
  10. Chill in the refrigerator for at least 30 minutes before serving.

Notes

For a richer chocolate flavor, use dark cocoa powder. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
