Ingredients

  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup whole milk
  • 1/2 cup boiling water
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract (for cream filling)
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream (for chocolate glaze)
  • 2 tbsp unsalted butter (for chocolate glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
  2. In a medium bowl, sift together the flour, baking powder, baking soda, salt, cocoa powder, and sugar. Set this mixture aside.
  3. In a large bowl, beat the softened butter and eggs together until creamy. Add the vanilla extract and milk, mixing until smooth. Gradually add the dry ingredients and mix until just combined. Finally, stir in the boiling water until the batter is thin and smooth.
  4. Pour the batter evenly into the prepared cake pans. Bake for 25-30 minutes or until a toothpick comes out clean from the center. Let cakes cool in the pans for 10 minutes before moving them to a wire rack to cool completely.
  5. In a chilled bowl, whip together the heavy cream, powdered sugar, and vanilla extract until soft peaks form. Keep it in the fridge until you are ready to use it.
  6. In a heatproof bowl, melt the chocolate chips, heavy cream, and butter together over a double boiler or in the microwave, stirring until smooth and shiny. Let the glaze cool a little before using.
  7. Once the cakes are completely cool, place one layer on a serving plate. Spread a thick layer of whipped cream filling over the top. Place the second layer on top and gently press down. Pour the chocolate glaze over the whole cake, letting it drip down the sides for that classic Ding Dong look.
  8. Chill the cake for about 30 minutes to let the glaze set. Once set, slice and enjoy this decadent cake!
