A delightful dessert combining rich chocolate flavors with a crunchy crumble topping, featuring sour cherries and creamy quark.

- 150 g soft butter
- 100 g sugar
- 1 egg (size M)
- 3 tablespoons cocoa powder
- 250 g flour (Type 405)
- 2 teaspoons baking powder
- 1 pinch of salt
- Some butter for the baking pan
- 1 jar sour cherries (drained weight 350 g)
- 125 g soft butter
- 120 g sugar
- 2 eggs (size M)
- 500 g low-fat quark
- 1 packet vanilla pudding powder
- Optional: some powdered sugar for dusting
Instructions
- Combine all ingredients for the dough in a bowl and knead with mixer hooks for about 5 minutes.
- Preheat the oven to 180°C (160°C for fan ovens).
- Grease a springform pan (Ø 26 cm) and press about 2/3 of the dough into the base, creating a border about 3 cm high.
- Drain the sour cherries well in a sieve and distribute them on the dough base.
- Cream together the butter and sugar, then gradually stir in the eggs.
- Add the quark and vanilla pudding powder, mixing until smooth, and pour the filling over the cherries.
- Tear the remaining dough into small crumbs and distribute them over the top of the cake.
- Bake in the preheated oven for about 50-55 minutes until golden brown.
- Let it cool completely before removing from the pan and optionally dust with powdered sugar before serving.
Notes
Store any leftover cake in an airtight container for up to 3 days at room temperature or refrigerate for up to a week.
