A rich and moist Chocolate Covered Strawberry Drip Cake topped with luscious chocolate ganache and fresh strawberries, perfect for any special occasion.

- 1 cup semi-sweet chocolate chips
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1/2 cup heavy cream
- 1 cup buttermilk
- 1 teaspoon salt
- 2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 2 large eggs
- 3/4 cup unsweetened cocoa powder
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- Fresh strawberries for decoration
- Melted chocolate for drizzling
Instructions
- Preheat your oven to 350F (175C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Mix in buttermilk, vegetable oil, eggs, and vanilla extract until combined.
- Slowly stir in boiling water until smooth.
- Divide the batter evenly between the cake pans and smooth the tops. Bake for 30-35 minutes, checking doneness with a toothpick.
- Cool the cakes in the pans for 10 minutes, then move to a wire rack to cool completely.
- For the ganache, heat chocolate chips and heavy cream in a bowl, stirring until smooth.
- Place one cake layer on a serving plate and spread chocolate ganache over it, topped with sliced strawberries.
- Place the second layer on top and pour remaining ganache over the cake, letting it drip down the sides.
- Top with fresh strawberries and melted chocolate. Refrigerate for about 30 minutes to set before serving.
Notes
Store in an airtight container in the refrigerator for up to 3 days. If longer storage is needed, freeze cake layers before adding ganache.
