Description

A rich and moist Chocolate Covered Strawberry Drip Cake topped with luscious chocolate ganache and fresh strawberries, perfect for any special occasion.


Ingredients

  • 1 cup semi-sweet chocolate chips
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1/2 cup heavy cream
  • 1 cup buttermilk
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 2 large eggs
  • 3/4 cup unsweetened cocoa powder
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • Fresh strawberries for decoration
  • Melted chocolate for drizzling

Instructions

  1. Preheat your oven to 350F (175C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Mix in buttermilk, vegetable oil, eggs, and vanilla extract until combined.
  4. Slowly stir in boiling water until smooth.
  5. Divide the batter evenly between the cake pans and smooth the tops. Bake for 30-35 minutes, checking doneness with a toothpick.
  6. Cool the cakes in the pans for 10 minutes, then move to a wire rack to cool completely.
  7. For the ganache, heat chocolate chips and heavy cream in a bowl, stirring until smooth.
  8. Place one cake layer on a serving plate and spread chocolate ganache over it, topped with sliced strawberries.
  9. Place the second layer on top and pour remaining ganache over the cake, letting it drip down the sides.
  10. Top with fresh strawberries and melted chocolate. Refrigerate for about 30 minutes to set before serving.

Notes

Store in an airtight container in the refrigerator for up to 3 days. If longer storage is needed, freeze cake layers before adding ganache.
