Description

Delicious cupcakes featuring a crunchy pretzel crust and creamy peanut butter cheesecake filling, drizzled with chocolate.


Ingredients

  • 1 cup Finely crushed pretzels
  • 4 tablespoons Unsalted butter (melted)
  • 8 oz Cream cheese (softened)
  • 1/2 cup Creamy peanut butter
  • 1/2 cup Granulated sugar
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 1/2 cup Mini chocolate chips
  • 1/2 cup Semi-sweet chocolate (melted)
  • 12 Pretzel twists (for topping)
  • Pinch of sea salt

Instructions

  1. Preheat your oven to 325°F (163°C) and line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, combine the finely crushed pretzels and melted butter. Press about 1 tablespoon of the mixture into the bottom of each muffin cup to form the crust.
  3. In a large bowl, beat together the cream cheese, peanut butter, and granulated sugar until smooth and creamy. Add in the egg and vanilla extract, and beat until fully incorporated.
  4. Fold in the mini chocolate chips into the cheesecake batter.
  5. Divide the cheesecake batter evenly among the muffin cups, filling each about three-quarters full.
  6. Bake for 15-18 minutes, or until the edges are set and the centers slightly jiggle. Remove from the oven and let cool completely in the tin.
  7. Transfer the cooled cupcakes to the refrigerator to chill for at least 2 hours.
  8. Once chilled, drizzle the melted semi-sweet chocolate over the top of each cupcake. Place a pretzel twist on top of each and sprinkle with a pinch of sea salt.
  9. Enjoy these decadent bites cold for the best texture and flavor!

Notes

Make sure your cream cheese is at room temperature for a smooth filling. You can swap out the semi-sweet chocolate with milk chocolate or dark chocolate based on your preference.
