Ingredients

  • 2 cups vanilla ice cream (slightly softened)
  • 1/2 cup crushed cookies, nuts, or sprinkles (optional)
  • 2 cups semisweet chocolate chips
  • 2 tablespoons coconut oil
  • Optional toppings: crushed nuts, sprinkles, or shredded coconut

Instructions

  1. Line an 8×8-inch pan with parchment paper.
  2. Spread the softened vanilla ice cream evenly into the pan. Mix in crushed cookies, nuts, or sprinkles if desired.
  3. Freeze the ice cream for at least 120 minutes or until completely firm.
  4. Remove the ice cream from the pan and cut it into bars or squares.
  5. Insert a wooden popsicle stick into each bar. Return to the freezer while preparing the chocolate coating.
  6. In a microwave-safe bowl, melt the chocolate chips and coconut oil in 20-second intervals, stirring until smooth and glossy.
  7. Let the chocolate cool slightly to avoid melting the ice cream.
  8. Dip each ice cream bar into the melted chocolate, ensuring it’s fully coated.
  9. Quickly sprinkle with crushed nuts, sprinkles, or coconut before the chocolate hardens.
  10. Place the coated bars on a parchment-lined tray and freeze for another 60 minutes.
  11. Once fully set, serve immediately or store in an airtight container in the freezer.

Notes

For a smoother chocolate coating, shake off excess chocolate before placing the bars on parchment paper. Experiment with different ice cream flavors for a fun twist.
