- 2 tablespoons coconut oil

Instructions
- Line an 8×8-inch pan with parchment paper.
- Spread the softened vanilla ice cream evenly into the pan. Mix in crushed cookies, nuts, or sprinkles if desired.
- Freeze the ice cream for at least 120 minutes or until completely firm.
- Remove the ice cream from the pan and cut it into bars or squares.
- Insert a wooden popsicle stick into each bar. Return to the freezer while preparing the chocolate coating.
- In a microwave-safe bowl, melt the chocolate chips and coconut oil in 20-second intervals, stirring until smooth and glossy.
- Let the chocolate cool slightly to avoid melting the ice cream.
- Dip each ice cream bar into the melted chocolate, ensuring it’s fully coated.
- Quickly sprinkle with crushed nuts, sprinkles, or coconut before the chocolate hardens.
- Place the coated bars on a parchment-lined tray and freeze for another 60 minutes.
- Once fully set, serve immediately or store in an airtight container in the freezer.
Notes
For a smoother chocolate coating, shake off excess chocolate before placing the bars on parchment paper. Experiment with different ice cream flavors for a fun twist.
