- 2 cups vanilla ice cream (slightly softened)
- 1/2 cup crushed cookies, nuts, or sprinkles (optional)
- 2 cups semisweet chocolate chips
- 2 tablespoons coconut oil
- Crushed nuts, sprinkles, or shredded coconut (for optional toppings)
Instructions
- Line an 8×8-inch pan with parchment paper. Spread the softened vanilla ice cream evenly into the pan. Mix in crushed cookies, nuts, or sprinkles if desired. Freeze for at least 2 hours until firm.
- Remove the ice cream from the pan and cut it into bars or squares. Insert wooden popsicle sticks into each bar and return them to the freezer.
- In a microwave-safe bowl, melt the chocolate chips and coconut oil in 20-second intervals, stirring until smooth. Let cool slightly.
- Dip each ice cream bar into the melted chocolate, coating fully, then sprinkle with toppings before the chocolate hardens. Place on a parchment-lined tray and freeze for another hour.
- Once set, serve immediately or store in an airtight container in the freezer.
