Ingredients

  • 2 cups vanilla ice cream (slightly softened)
  • 1/2 cup crushed cookies, nuts, or sprinkles (optional)
  • 2 cups semisweet chocolate chips
  • 2 tablespoons coconut oil
  • Crushed nuts, sprinkles, or shredded coconut (for optional toppings)

Instructions

  1. Line an 8×8-inch pan with parchment paper. Spread the softened vanilla ice cream evenly into the pan. Mix in crushed cookies, nuts, or sprinkles if desired. Freeze for at least 2 hours until firm.
  2. Remove the ice cream from the pan and cut it into bars or squares. Insert wooden popsicle sticks into each bar and return them to the freezer.
  3. In a microwave-safe bowl, melt the chocolate chips and coconut oil in 20-second intervals, stirring until smooth. Let cool slightly.
  4. Dip each ice cream bar into the melted chocolate, coating fully, then sprinkle with toppings before the chocolate hardens. Place on a parchment-lined tray and freeze for another hour.
  5. Once set, serve immediately or store in an airtight container in the freezer.
